Need suggestions/advice 1st all-grain batch

Need to plan my 1st all grain batch and I am hoping for some guidence/suggestions. Will the May STOM (Belgian & French ales, Example-Witbiers, Saisons, Biere de garde) be ok to start with, or should I try something more basic? Having never made most of these styles (and only wit as extract) I'm not sure what the pitfalls or complications may be.

I found a Wit recipe on Brew-Monkey.com, simply named Wit. I like this one as well, though not for any reason I can put my finger on.

yea the saison or belgain

yea the saison or belgain pale ale is the way to go. the only problem with the saison is the yeast but doug has two bags of it he just got in.

Any of them should be ok to try, but a large amount of wheat can be difficult to sparge. The saison and wit will be more forgiving of higher temperatures, but you still don't want to just let them go.
