5lbs Continental Pilsener 4lbs Munich 3lbs Vienna 1lb CaraMunich (60L)
Mash at 151F
1.5 oz Hallertau 4.0% AA for 60 mins 0.5 oz Hallertau 4.0% AA for 20 mins
WLP820, WYeast 2206, Fermentis Saflager S-23
Ferment at 50F and lager 4 weeks. Carbonate 2 to 2.5 volumes.
I think Doug was out last time I was there.... This looks like a very good recipe. What would be a good sub if you could not get Hallertauer?
I have tons of Hallertau. :-)
Really any German hop would be proper. This beer as all about the malt anyways. The hops take a back seat.
I'm surprised this recipe has 8 % caramunich 60. That seems like a lot of crystal malt for a Marzen.
I double checked the recipe and all is correct.
I'll double check the numbers tonight but I'm pretty sure that is what is in the book.
Speaking of hops, is hops direct sold out? I see nothing in their store. If so, it's time to scramble or brew with whole leaf.
Pellet and leaf hops are BLANK. They still have their letter about he promise of the 2008 crop.
